Today, this is replaced by alternatives such as tapioca or sweet potato starch, as genuine warabiko is rarely available outside Japan. The resulting mixture resembles jelly in consistency and appearance, but is softer and more supple \u2013 a bit like a cross between gummy bears and jelly, only much more delicate.<\/p>\n\n<p class=\"wp-block-paragraph\">Warabi Mochi is typically dusted with Kinako, or roasted soya bean flour, and served with Kuromitsu \u2013 a dark, aromatic syrup. Both lend the rather neutral base of the Mochi a balanced sweetness and a pleasant nutty aroma. It is said that Emperor Daigo was a great lover of this sweet. Later, Warabi Mochi was served primarily in teahouses and during tea ceremonies, and has retained a firm place in Japanese wagashi culture to this day.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-unterscheidet-es-sich-von-anderen-mochi-sorten\">How does it differ from other types of Mochi?<\/h3>\n\n<p class=\"wp-block-paragraph\">Although the name might suggest otherwise \u2013 strictly speaking, Warabi Mochi is not &#8216;real&#8217; Mochi. This is because classic Mochi is made from steamed glutinous rice (Mochigome), which is pounded and worked into a chewy dough. Warabi Mochi, on the other hand, is based on starch \u2013 this significantly alters both the preparation and the mouthfeel.\n&lt;\/ seg&gt;\n\n<seg id=\"32\">\n<strong>The main differences:<\/strong><\/seg><\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Die wichtigsten Unterschiede:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Ingredients:<\/strong> Traditional Mochi consists of glutinous rice or rice flour. Warabi Mochi, on the other hand, is made from warabi or tapioca starch, water and sugar.<\/li>\n\n\n\n<li><strong>Consistency:<\/strong> Rice Mochi is chewy, stretchy and slightly sticky. Warabi Mochi is soft, jelly-like, smooth and melts in the mouth.<\/li>\n\n\n\n<li><strong>Preparation:<\/strong> Traditional Mochi requires steaming, pounding and a lot of strength. Warabi Mochi is mixed and cooked in a saucepan in just a few minutes \u2013 simple and quick.<\/li>\n\n\n\n<li><strong>Serving:<\/strong> Traditional Mochi is often filled or shaped <em>(e.g. daifuku)<\/em>. Warabi Mochi is cut into cubes, rolled in Kinako and served with syrup \u2013 particularly in summer.<\/li>\n\n\n\n<li><strong>Flavour:<\/strong> Warabi Mochi is subtly sweet and nutty thanks to the Kinako. Rice Mochi is often significantly sweeter or has a more intense flavour due to fillings.<\/li>\n\n\n\n<li><strong>Seasonality:<\/strong> Classic Mochi is often eaten at New Year or on festive occasions. Warabi Mochi is a typical summer treat.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">As different as the two varieties may be \u2013 they share their origins in traditional wagashi culture and both represent craftsmanship, aesthetics and culinary delight.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-warabi-mochi-selber-machen-so-geht-s\">Making Warabi Mochi yourself: Here\u2019s how<\/h2>\n\n<p class=\"wp-block-paragraph\">Warabi Mochi is very easy to make at home \u2013 with just a few ingredients, you can conjure up a wonderfully delicate, summery, light dessert. <strong>Here\u2019s what you\u2019ll need:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Tapioca starch<\/strong> (or warabi starch, if you can get hold of it)<\/li>\n\n\n\n<li><strong>Sugar and water<\/strong> for the base mixture<\/li>\n\n\n\n<li><strong>Kinako<\/strong> \u2013 roasted soya bean flour mixed with sugar and salt<\/li>\n\n\n\n<li><strong>Kuromitsu<\/strong> \u2013 a dark syrup made from muscovado sugar and water<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Mix the starch, sugar and water until smooth, then pour the mixture through a sieve into a saucepan. Heat whilst stirring until the mixture becomes thick and transparent, then pour into a tin lined with cling film and smooth the surface. Look for fine, smooth products for the best consistency.<\/li>\n\n\n\n<li><strong>Kuromitsu alternatives:<\/strong> Instead of muscovado, you can use sugar beet syrup or dark maple syrup \u2013 this adds variety to the flavour.<\/li>\n\n\n\n<li><strong>Flavour variations:<\/strong> Matcha can be stirred directly into the dough or sprinkled over the finished Mochi.
