Mi piace prepararlo quando ho voglia di qualcosa di sostanzioso, ma non troppo pesante, e quando in frigo ci sono ancora degli avanzi di verdura che aspettano di essere utilizzati. Che sia caldo o freddo, appena tolto dalla padella o come Bento da portare con te: il Japchae va bene sempre. Il nome significa letteralmente \u201cpiatto misto di verdure\u201d, e in effetti originariamente il Japchae era un piatto preparato senza pasta: nacque alla corte reale della dinastia Joseon e all\u2019epoca consisteva in verdure saltate in padella disposte ad arte, ma senza alcun dangmyeon.<\/p>\n\n<p>I noodles di patate dolci trasparenti, come li conosciamo oggi, sono stati aggiunti solo nel XX secolo. Ormai sono il cuore del Japchae: meravigliosamente morbidi, elastici e con quella tipica superficie lucida.<\/p>\n\n<p>Tradizionalmente il piatto viene servito con carne di manzo marinata, ma in Corea se ne conoscono innumerevoli varianti: a volte con l&#8217;uovo, a volte completamente vegetariano, a volte con funghi e spinaci o in un mix colorato con peperoni, carote e cipollotti. Particolare \u00e8 anche la preparazione: tutti gli ingredienti vengono saltati in padella singolarmente e mescolati tra loro solo alla fine. Viene spesso servito in occasione di compleanni, feste di famiglia o festivit\u00e0 tradizionali come il Capodanno lunare (Seollal) e il Chuseok. Ormai, per\u00f2, fa parte anche della vita quotidiana, come contorno, piatto principale o nel cestino del pranzo.<\/em><\/p>\n\n\n\n<p class=\"has-text-align-left\"><em>Cosa mi piace particolarmente: il Japchae non \u00e8 buono solo appena tolto dalla padella, ma anche il giorno dopo. \u00c8 quindi perfetto da preparare in anticipo, ideale per le settimane stressanti o da portare in ufficio.<\/em><\/p>\n<\/div><\/section>\n<\/div><\/section>\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\" id=\"h-so-gelingt-dir-japchae-zu-hause\">Ecco come preparare il Japchae a casa<\/h2>\n\n<p>Preparare il Japchae a casa \u00e8 pi\u00f9 facile di quanto si pensi e, con gli ingredienti giusti, questo classico coreano diventa un piatto saltato in padella meravigliosamente aromatico. Tagliatelle di patate dolci trasparenti si uniscono a verdure colorate, sesamo tostato e una salsa di soia leggermente dolce, perfetta in realt\u00e0 per ogni stagione.<\/p>\n\n<p><strong>Gli ingredienti principali per il Japchae:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Spaghetti di patate dolci:<\/strong> I dangmyeon sono i tipici spaghetti coreani a base di fecola di patate dolci. Una volta cotti diventano piacevolmente elastici e assorbono particolarmente bene la salsa. Un piccolo trucco: dopo la cottura, tagliarli con le forbici, questo rende pi\u00f9 facile mescolarli e porzionarli.<\/li>\n\n\n\n<li><strong>Verdure:<\/strong> Un mix colorato di carote, peperoni, cipolle, spinaci e cipollotti garantisce colore e consistenza croccante. Ogni tipo viene saltato in padella brevemente e separatamente, in modo da preservarne al meglio il sapore e la consistenza.<\/li>\n\n\n\n<li><strong>Funghi e Tofu:<\/strong> I funghi champignon sodi apportano una nota saporita, mentre i Shiitake freschi o ammollati aggiungono ulteriore Umami. Il Tofu fornisce proteine extra; \u00e8 preferibile che sia compatto e ben asciugato prima di essere saltato in padella.<\/li>\n\n\n\n<li><strong>Salsa di condimento:<\/strong> Una miscela di salsa di soia, olio di sesamo, miele (o sciroppo di riso per la variante vegana), sale e pepe conferisce al piatto la sua caratteristica profondit\u00e0 dolce-salata. Nel frattempo prepara le verdure: carote, peperoni, cipolle, funghi e cipollotti vanno tagliati a strisce sottili o a fettine, gli spinaci vanno sbollentati e strizzati. Anche il Tofu va tagliato a strisce e asciugato tamponandolo.<\/p>\n\n<p>Poi si passa alla cottura: ogni tipo di verdura va messo in padella separatamente, in modo che tutto rimanga bello croccante e conservi il proprio sapore.
