Qualcosa in questo pollo croccante, dolce e piccante ha immediatamente stuzzicato la mia curiosit\u00e0 e volevo assolutamente provarlo. In una di quelle giornate frenetiche in cui il pranzo in ufficio deve essere veloce, l\u2019ho preparato. Il risultato? Croccante, aromatico e cos\u00ec soddisfacente che mi ha sostenuto per tutto il pomeriggio. Col tempo ne \u00e8 nata la mia versione preferita: non troppo piccante, ben croccante e con il giusto equilibrio tra dolce e piccante. Ed \u00e8 proprio questa ricetta che ho scritto qui per te, cos\u00ec potrai prepararla in qualsiasi momento.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"wissen\">Ma cos&#8217;\u00e8 in realt\u00e0 il Dakgangjeong?<\/h2>\n\n<p>Se ti capita di passeggiare per le strade di Seul, scoprirai ad ogni angolo piccole bancarelle che vendono questo piatto: il Dakgangjeong. Oggi, per\u00f2, fa parte da tempo anche della cultura coreana dell&#8217;Anju. Si tratta di piccoli piatti che si gustano volentieri insieme alla birra o al soju. Non c&#8217;\u00e8 da stupirsi, perch\u00e9 il mix di carne croccante, salsa speziata e un pizzico di piccante si abbina perfettamente a una bevanda fresca.<\/p>\n\n<section class=\"wp-block-uagb-section uagb-section__wrap uagb-section__background-color alignfull uagb-block-948a4294 uagb-section__background-none\"><div class=\"uagb-section__overlay\"><\/div><div class=\"uagb-section__inner-wrap\">\n<section class=\"wp-block-uagb-section uagb-section__wrap uagb-section__background-color alignfull uagb-block-f614bd54 uagb-section__background-none\"><div class=\"uagb-section__overlay\"><\/div><div class=\"uagb-section__inner-wrap\">\n<iframe data-w-type=\"embedded\" frameborder=\"0\" scrolling=\"no\" marginheight=\"0\" marginwidth=\"0\" src=\"https:\/\/x64on.mjt.lu\/wgt\/x64on\/x41j\/form?c=141b6e75\" width=\"100%\"><\/iframe>\n\n<script type=\"text\/javascript\" src=\"https:\/\/app.mailjet.com\/pas-nc-embedded-v1.js\"><\/script>\n<\/div><\/section>\n<\/div><\/section>\n\n<p>Dakgangjeong, tra l&#8217;altro, si differenzia leggermente dal pi\u00f9 famoso Korean Fried Chicken, che forse gi\u00e0 conosci. Invece di una panatura spessa e infarinata, qui \u00e8 un sottile strato di amido a garantire la croccantezza, che rimane particolarmente stabile grazie alla doppia frittura. Il risultato: anche se la salsa aderisce gi\u00e0 lucida alla carne, il boccone rimane croccante e soffice.<\/p>\n\n<p>In Corea ci sono molte varianti: alcune bancarelle usano ali o piccole cosce, altre aggiungono arachidi o mandorle alla salsa per renderla ancora pi\u00f9 croccante. Anche il grado di piccantezza varia da delicato e dolce a davvero infuocato. Il segreto non sta negli ingredienti esotici, ma nella giusta sequenza: condire, friggere due volte, ridurre la salsa. Con un po&#8217; di pazienza e olio bollente, potrai preparare questo pollo croccante coreano nella tua cucina anche senza un chiosco di street food.<\/p>\n\n<p><strong>Gli ingredienti principali per il Dakgangjeong:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Pollo:<\/strong> Le cosce di pollo disossate sono le pi\u00f9 adatte, perch\u00e9 rimangono particolarmente succose. Anche le ali o le cosce vanno bene.<\/li>\n\n\n\n<li><strong>Amido:<\/strong> L&#8217;amido di patate o di mais garantisce un rivestimento sottile e croccante. Dopodich\u00e9 si procede alla frittura, per la precisione due volte: nel primo passaggio la carne viene cotta, nel secondo si sviluppa la giusta croccantezza, che non viene meno nemmeno una volta immersa nella salsa.<\/p>\n\n<p>Nel frattempo fai ridurre la salsa fino a quando non si addensa leggermente e assume quell&#8217;aspetto lucido. Quando poi aggiungi i pezzi di pollo caldi, ogni singolo pezzo si ricopre immediatamente di glassa dolce-piccante.
