L&#8217;impasto non voleva proprio diventare elastico, indipendentemente da quanta forza ci mettessi. Solo quando, un giorno, ho preparato di nuovo gli Udon fatti a mano, ho avuto un&#8217;illuminazione: l\u00ec, tradizionalmente, l&#8217;impasto duro della pasta viene lavorato con i piedi, perch\u00e9 \u00e8 difficilmente lavorabile con le mani. Era proprio questa la soluzione che mi mancava per le frittelle di riso! A prima vista le cucine sembrano molto diverse, ma proprio quando si tratta degli impasti si vede quanto siano simili a volte i trucchi artigianali. Che si tratti di Udon o di garaetteok, alla fine si tratta sempre di dare all\u2019impasto la giusta struttura ed elasticit\u00e0. Ed \u00e8 proprio questo che per me costituisce il fascino: scoprire tecniche antiche, adattarle e riviverle nella propria cucina.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"wissen\">Cosa sono in realt\u00e0 i Garaetteok?<\/h2>\n\n<p>I Garaetteok sono tortini di riso allungati e di forma cilindrica, realizzati con farina di riso macinata molto finemente. Il loro sapore \u00e8 delicato e piuttosto neutro, ed \u00e8 proprio questo che li rende cos\u00ec versatili. In Corea sono la base di alcuni dei piatti pi\u00f9 famosi: in primo luogo il Tteokbokki, questi tortini di riso da strada dal sapore dolce-piccante in salsa piccante. Questa farina fa s\u00ec che l&#8217;impasto, dopo la cottura al vapore e la lavorazione, diventi elastico e gommoso, ma non appiccicoso.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"reismehl-kaufen\">Quale farina di riso comprare?<\/h3>\n\n<p>Al momento dell&#8217;acquisto, assicurati che sulla confezione sia indicato \u201cRice Flour \/ Non-glutinous\u201d. Evita \u201cGlutinous\/Sweet Rice Flour\u201d, \u2018Mochiko\u2019 o \u201cShiratamako\u201d, poich\u00e9 si tratta di farine di riso glutinoso per Mochi e tteok dolci.<\/p>\n\n<p>La finezza \u00e8 fondamentale: pi\u00f9 la farina \u00e8 fine, pi\u00f9 la superficie sar\u00e0 liscia e migliore sar\u00e0 l&#8217;elasticit\u00e0; con una farina leggermente pi\u00f9 grossolana e macinata a secco, di solito servono qualche millilitro di acqua in pi\u00f9. Come valore indicativo nella ricetta: per 250 g di farina, inizia con 150-180 ml di acqua bollente (la consistenza friabile \u00e8 corretta), poi cuoci al vapore e impasta o pestando energicamente.<\/p>\n\n<p>Facoltativamente, puoi aggiungere il 5-10% di farina di riso glutinoso per aumentare leggermente l\u2019elasticit\u00e0. Tradizionalmente, per\u00f2, si lavora con il 100% di farina di riso non glutinoso. Idealmente, una farina di riso fine e non glutinosa del nostro Shop \u00e8 perfetta per i Garaetteok. \u00c8 quella che ho usato anche per preparare questa ricetta.<\/p>\n\n<div style=\"height:20px\"
