Il nome significa \u201ctortino di riso fritto\u201d. Tteok significa tortino di riso, bokki sta per fritto o stufato. La base: tortine di riso Garae-tteok morbide e gommose e una salsa saporita a base di gochujang, salsa di soia, zucchero e aglio. Di solito si aggiungono anche tortini di pesce, uova e cipollotti. Ma non preoccuparti: puoi adattarla a tuo piacimento rendendola pi\u00f9 delicata o addirittura vegetariana. La combinazione di consistenza, sapore e piccantezza rende il Tteokbokki un vero piatto del cuore, non solo in Corea!<\/p>\n\n<h3 class=\"wp-block-heading\">Dalla cucina reale alla strada<\/h3>\n\n<p>Sapevi che originariamente il Tteokbokki veniva servito senza peperoncino? La prima ricetta risale alla cucina di corte coreana della dinastia Joseon: il gungjung Tteokbokki, una variante delicata a base di salsa di soia con carne di manzo e verdure. Solo dopo la guerra di Corea il gochujang \u00e8 diventato popolare e con esso anche l&#8217;odierno Tteokbokki piccante. Ecco tre varianti popolari:<\/em><\/p>\n\n\n\n<p class=\"has-text-align-left\"><em><strong>Jjajang Tteokbokki<\/strong>: la versione probabilmente pi\u00f9 insolita viene preparata con una saporita salsa di fagioli neri (Jjajang). \u00c8 meno diffusa, ma particolarmente apprezzata dai bambini, poich\u00e9 non \u00e8 affatto piccante. Il sapore ricorda quello del Jjajangmyeon, ma con l&#8217;aggiunta delle tortine di riso.<\/em><\/p>\n\n\n\n<p><em><strong>Tteokbokki classico: <\/strong>Questa \u00e8 la versione pi\u00f9 famosa, che in Corea si trova praticamente ad ogni angolo di strada. Viene preparato con una salsa rosso vivo a base di gochujang, zucchero o sciroppo di amido, tortini di pesce, uova e cipollotti. Piccante, dolce, sostanzioso e assolutamente irresistibile \ud83d\ude00<\/em><\/p>\n\n\n\n<p><em><strong>Gungjung Tteokbokki: <\/strong>Questa variante delicata proviene dalla cucina della corte reale della dinastia Joseon. Al posto del gochujang si usa la salsa di soia, insieme a carne di manzo, verdure, pinoli e sesamo. Un classico elegante con tanto Umami e un tocco storico. Perfetto per chi lo preferisce meno piccante.<\/em><\/p>\n<\/div><\/section>\n<\/div><\/section>\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h2 class=\"wp-block-heading\" id=\"tteokbokki-selber-machen\">Preparare il Tteokbokki in casa: ecco come fare<\/h2>\n\n<p>Cucinare il Tteokbokki a casa \u00e8 molto pi\u00f9 semplice di quanto si pensi e non servono dieci ingredienti speciali. L&#8217;importante \u00e8 conoscere alcune nozioni di base sugli ingredienti, cos\u00ec potrai preparare l&#8217;originale street food anche nella tua cucina!<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"reiskuchen\">Torte di riso: fresche, surgelate o fatte in casa?<\/h3>\n\n<p>Per questa ricetta ti servono i cosiddetti Garae-tteok: si tratta di tortine di riso cilindriche dalla consistenza particolarmente gommosa ed elastica. Sono l&#8217;ingrediente principale e conferiscono al Tteokbokki la sua consistenza davvero speciale. Hai diverse possibilit\u00e0:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Torte di riso surgelate<\/strong> acquistate al negozio asiatico: \u00e8 indispensabile lasciarle in ammollo in acqua tiepida per circa 30 minuti, affinch\u00e9 diventino morbide ed elastiche.<\/li>\n\n\n\n<li><strong>Torte di riso refrigerate<\/strong> (ad es. in confezione sottovuoto): anche queste vanno messe in ammollo. Pi\u00f9 precisamente l\u2019eomuk, sottili fette di pesce molto popolari in Corea. Le trovi surgelate nei negozi asiatici. Per la variante vegetariana puoi usare il Tofu: preferibilmente Tofu compatto o fritto, tagliato a fette.
