Questa tenera carne di manzo caramellata con la sua marinata leggermente dolce, che ricorda un po&#8217; il barbecue ma richiama chiaramente la Corea, \u00e8 per me un vero e proprio piatto del benessere. Rende la carne particolarmente tenera e conferisce una dolcezza fruttata che si abbina perfettamente agli aromi salati e speziati. In origine era chiamato \u201cmaekjeok\u201d e veniva grigliato su spiedini sul fuoco aperto \u2013 in modo simile allo yakitori giapponese o allo shashlik turco. Nel corso del tempo si \u00e8 evoluto nell\u2019odierno Bulgogi, in cui la carne viene prima marinata in una salsa aromatica e poi grigliata o fritta. Tutto ci\u00f2 che ti serve \u00e8 della buona carne di manzo, un po&#8217; di preparazione e alcuni ingredienti tipici della cucina coreana.<\/p>\n\n<p><strong>Gli ingredienti principali per il Bulgogi:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Carne:<\/strong> L&#8217;ideale \u00e8 una carne di manzo ben marezzata come l&#8217;entrec\u00f4te, il filetto o la fesa. Se lasci la carne in freezer per circa 30 minuti prima di tagliarla, potrai affettarla molto sottilmente. Questo garantir\u00e0 bocconi teneri e succosi.<\/li>\n\n\n\n<li><strong>Marinata:<\/strong> La base \u00e8 costituita da una miscela di purea di pera Nashibi (o di una pera dolce), cipolla, aglio, zenzero, salsa di soia, miele, olio di sesamo tostato e, a piacere, un cucchiaio di gochujang. La pera conferisce una dolcezza naturale e rende la carne meravigliosamente tenera.<\/li>\n\n\n\n<li><strong>Per la cottura:<\/strong> Una combinazione di olio neutro (ad es. olio di colza) e olio di sesamo conferisce aroma e calore. La carne viene rosolata in padella o su una piastra insieme a sottili bastoncini di carota e cipollotti.<\/li>\n\n\n\n<li><strong>Contorni:<\/strong> Tradizionalmente il Bulgogi viene servito con il riso. Puoi per\u00f2 anche avvolgere la carne in foglie di insalata, spalmare un po&#8217; di ssamjang e mangiarla con le mani, proprio come si fa in Corea. \u00c8 particolarmente gustoso con il Kimchi, le verdure sottaceto o un uovo all&#8217;occhio di bue.<\/li>\n<\/ul>\n\n<p><strong>Ecco come si fa:<\/strong><\/p>\n\n<p>Per prima cosa si prepara la marinata e si lascia la carne a marinare per tutta la notte. Il giorno dopo basta solo cuocere il riso, tagliare le verdure e rosolare bene la carne marinata. La marinata rimane sostanzialmente la stessa, cambia solo leggermente il modo di cuocerla: il pollo richiede un po&#8217; pi\u00f9 di tempo e deve cuocere bene fino in fondo. Perfetto per una versione un po&#8217; pi\u00f9 leggera, ma altrettanto saporita.<\/p>\n\n<p><strong>Vegetariano con Tofu o funghi:<\/strong> Il Tofu assorbe particolarmente bene la marinata del Bulgogi. \u00c8 meglio strizzarlo prima e asciugarlo bene, in modo che diventi bello croccante durante la cottura. Anche con funghi spessi come i pleurotus o i funghi ostrica, il piatto viene benissimo. Basta tagliarli a strisce spesse, marinarli e rosolarli bene, questo garantisce un sacco di Umami.<\/p>\n\n<p><strong>Un po&#8217; pi\u00f9 piccante, per chi lo ama:<\/strong> Se ti piace il piccante, puoi aumentare la quantit\u00e0 di gochujang nella marinata o aggiungere un po&#8217; di Gochugaru <a href=\"https:\/\/1mal1japan.de\/produkt\/gochugaru-400g\/\"><u>(im Shop ansehen)<\/u><\/a>. Anche il peperoncino fresco tritato finemente aggiunge un tocco di piccantezza in pi\u00f9, soprattutto in combinazione con la dolcezza della pera, creando un contrasto davvero piacevole.<\/p>\n\n<p><strong>Con gli spaghetti di vetro, quasi come il Japchae:<\/strong> Si ottiene una variante particolarmente sostanziosa aggiungendo al Bulgogi gli spaghetti di vetro coreani (dangmyeon). Basta cuocerli separatamente, scolarli e aggiungerli in padella negli ultimi minuti: assorbiranno la marinata rimanente e renderanno il piatto ancora pi\u00f9 saziante. In questo modo il Bulgogi diventa quasi un piatto saltato in padella ispirato al Japchae, con una consistenza croccante.<\/p>\n\n<p><strong>Hai mai preparato il Bulgogi da solo?
