What is Hot Pot Soup Base Hot & Spicy?

Lee Kum Kee’s “Hot & Spicy” Hot Pot Soup Base is a concentrated spice paste for preparing classic Sichuan-style Chinese hot pots. The paste contains aromatic ingredients such as chilli, Sichuan pepper, garlic, fermented soya beans and spice oils – for a hot, full-bodied broth with a typical “Mala” flavour: tinglingly hot and intensely spicy.

Simply add the paste to a pan with water, bring it to the boil briefly, and you’re ready to cook your favourite ingredients such as thinly sliced meat, tofu, noodles or vegetables in it. The base is also ideal for spicy noodle or vegetable dishes.

A must-have for fans of authentic Sichuan cuisine – conveniently portioned, quick to prepare, full of flavour.

How do I prepare the hotpot soup base?

It’s very simple to use: pour the entire contents of the packet into a saucepan with around 500–600 ml of water. Bring to the boil briefly, give it a stir – and your spicy broth is ready for any ingredients of your choice. Whether it’s a classic table hotpot or a quick bowl of soup for a snack: this paste brings the Sichuan style straight into your kitchen.

How spicy is the broth and what goes well with it?

The heat level is medium to strong, just like the popular Sichuan cuisine. If you prefer it milder, you can dilute the broth with more water or use a mild sesame sauce for dipping. For a full hotpot experience, we recommend fresh ingredients such as mushrooms, Chinese cabbage, glass noodles, tofu, fish balls or paper-thin slices of meat – anything you can add to the hot broth and enjoy straight at the table.

How much does one pack yield and how should I store it?

The 70g portion yields about 2–3 servings of hotpot. Perfect, then, for an evening for two or a little hotpot treat in between meals. Unopened, the paste has a long shelf life; simply store it in a cool, dry place. Please keep opened packets in the fridge and use within a few days.
