What is Tsuyu sauce?

Tsuyu is a classic Japanese seasoning and noodle broth based on soy sauce and dashi. Dashi is traditionally made from kombu seaweed and bonito (katsuobushi) and gives the sauce its characteristic umami depth. Tsuyu is usually sold in concentrated form and diluted with water before use. It is one of the basic sauces of Japanese cuisine and is used in both hot and cold dishes.

What does Tsuyu taste like?

Tsuyu has a balanced blend of salty soy sauce, subtle sweetness and distinct umami from dashi. The flavour is robust but not sharp, and comes across as rounded and full-bodied. How do I use the triple concentrate?

How do I store Tsuyu sauce?

Unopened, the bottle can be stored at room temperature. Once opened, it should be kept tightly sealed in the fridge. This helps preserve the flavour. Shake gently before use, as ingredients may settle. Diluted sauce should be used immediately.
