How to make homemade Udon!
To make homemade Udon noodles, first mix the flour and salted water, then knead vigorously into a ball. Place the dough in a plastic bag and work it with your feet until it fills the bag. After folding and kneading several times, leave the dough to rest. Rolled out, folded and cut into strips, the noodles are ready to serve once cooked.

Ingredients (2 servings)a
300 g flour (e.g. wheat)
15 g salt
150 ml water
or buy Udon noodles 😉 (im Shop ansehen)
Method (20 minutes + 60 minutes resting time)

Step 1
Prepare the ingredients for the homemade Udon noodles.

Step 2
Place the flour in a large bowl and mix the salt with water in another bowl. Then pour the salt water into the flour.

Step 3
First mix the flour and salted water together with your fingers in the bowl, then knead the dough for at least 5 minutes on the work surface with the palms of your hands until it forms a firm ball.

Step 4
Then place the dough in a sturdy plastic bag (e.g. a large freezer bag) and leave the top open so that air can escape. Then place the bag of dough on the floor, cover it with a tea towel and knead it with your feet (yes, with your feet!) knead it thoroughly and with feeling.

Passaggio 5
Knead until the dough has spread out well in the bag and fills the whole bag. Remove the dough and fold it twice into a smaller square. Repeat the kneading and folding three more times.
Then shape the dough into a ball, place it back in the plastic bag, seal it and leave to rest in the fridge for 1 hour.

Step 6
Generously dust your work surface with flour, place the dough on it and dust it with flour as well. First, flatten the dough ball well with your hands, then use a rolling pin to roll out the dough to a thickness of 3 mm.

Now fold the dough sheet into several layers and cut 3 mm wide noodles with a large sharp knife.

Step 8
Now the noodles can be cooked for 5 to 10 minutes in slightly salted water in a large pot, then drained and rinsed with cold water. Done – Itadakimasu!
