Rolled Sushi (maki) really only works with a special rolling mat. This is square measuring 24 x 24 cm and consists of bamboo strips held together in rows by sturdy cotton threads. After use, the sushi mat should be cleaned carefully with cold water (but without washing-up liquid) using a soft brush. It must then be left to dry thoroughly before being put away.
Tip: Wrap the sushi mat in cling film before use to prevent the rice from sticking between the bamboo strips. This also makes cleaning much easier!
