Temaki – hand-rolled Sushi with crunchy vegetables

Temaki, a wonderful variation on Sushi, is really very easy to make. This recipe, featuring plenty of fresh, crunchy vegetables and homemade sushi rice, is perfect for laying out all the ingredients on the table and letting everyone at the table shape their own delicious temaki Sushi! No sushi mats or fancy ingredients are needed – temaki are a delicious treat for young and old alike!

To make temaki Sushi, simply use your hands to roll vinegar-seasoned rice into a nori sheet. The colourful filling makes both adults and children want to tuck into this delicious snack straight away.

The filling can easily be adapted to suit your taste: For example, with raw, cooked or marinated fish (or other seafood), Japanese omelette (tamagoyaki) as well as fruit, sprouts or mayonnaise.

The original idea behind sushi </ a>was, incidentally, to preserve raw fish together with rice. Today, it is a Japanese national dish that is served and eaten in a wide variety of forms as a snack, starter or main course – the creations range from generously filled bowls to artistically designed rolls.

By the way, the seasoned carrots are definitely what makes this recipe special! Of course, fish and seafood play the leading role in Sushi preparation in Japan. But various vegetables are also absolutely essential to bring out the diverse flavours.

Both raw and spiced, simmered vegetables play an important role here. I love the combination used here of sweet carrots, lightly marinated in a savoury Dashi broth!

Temaki Sushi

Serves 4 | 10 minutes | 209 kcal

This wonderful Sushi variation is incredibly easy to make. With plenty of fresh vegetables and homemade sushi rice, this recipe is perfect for laying out all the ingredients on the table and letting everyone shape their own delicious temaki sushi! No sushi mat or fancy ingredients are needed – temaki are a delicious treat for young and old alike!


Ingredients (4 portions = 12 pieces)

600 g sushi rice (see recipe):
300 g rice (im Shop ansehen)
1 piece Kombu (im Shop ansehen)
2 tbsp sushi no ko (im Shop ansehen)

6 nori sheets (im Shop ansehen)
1 lettuce
1 cucumber
1 pepper
wasabi (im Shop ansehen)

For the seasoned carrot:
1 carrot
100 ml Dashi broth (im Shop ansehen) (to the recipe)
2 tsp sugar
1 pinch salt


Preparation (10 minutes / 60 minutes to cook the rice, if required)

Get the ingredients for the hand-rolled temaki sushi ready and prepare the sushi rice (click here for the recipe for delicious sushi rice) and leave to cool briefly. Also, for the seasoned carrots, if necessary, Dashi broth if required (click here for the recipe for Japanese Dashi broth).


Temaki Step 2: Prepare the wasabi

If you’re making the wasabi yourself using wasabi powder: The mixing ratio is 5 tsp wasabi powder to 3 tsp water. Mix both together in a small bowl, shape into a ball if desired, and leave to stand for 5 minutes to allow the flavour to develop.


Temaki Step 3: Prepare the seasoned carrots

Whilst the rice is cooking, prepare the seasoned carrots: To do this, first make the Dashi broth yourself if necessary.
Peel the carrot , remove the green ends and cut it in half. Cut each half into sticks. Place the carrot sticks in a suitable, smaller saucepan and bring to the boil with Dashi broth, sugar and salt. Cook the carrots uncovered over a medium heat for about 5 minutes until tender but still slightly al dente. Then drain and leave to cool.


Temaki Step 4: Prepare the vegetables

Now wash the lettuce, cucumber and pepper and pat them dry. Separate the individual leaves from the lettuce . Cut the cucumber into 10 cm long sticks. Cut the peppers in half and remove the seeds. Cut each half into strips 5 mm thick and 10 cm long.

Cut the nori sheets in half with a pair of scissors. Take one half of a nori sheet, with the shiny side facing outwards, and place about 1 tbsp Sushi rice on the left-hand side of the sheet, spreading it towards the top and bottom.
Now spread a small dollop of wasabi onto the rice (this can be omitted if desired).

Place the lettuce, cucumber, pepper and seasoned carrot one after the other diagonally towards the top-left corner on top of the rice.

Fold the bottom left-hand corner of the nori sheet upwards over the rice and filling. Continue rolling the Nori into a cone (like an ice-cream cone).

The temaki Sushi are now ready to serve. Done – Itadakimasu!
