This soba noodle salad with edamame and radishes is a fresh side dish for the coming spring; it’s eaten cold and is also ideal for taking with you. Combined with raw vegetables – such as carrots, peppers and spring onions – this soba noodle salad is healthy and will replenish your reserves depleted over the winter!
The salad can also be easily enhanced: for example, with prawns or fried chicken. With freshly ground pepper, ginger or a teaspoon of wasabi, the mild dressing transforms into a delicious, spicy version.

Soba noodle salad

Ingredients (serves 4)
For the salad:
2 portions of soba noodles (im Shop ansehen)
1 carrot
4 radishes
1 red pepper
1 spring onions
75 g edamame (frozen in this case)
For the dressing:
4 tbsp rice vinegar (im Shop ansehen)
1 tbsp soya sauce (im Shop ansehen)
1 tsp salt
1 tsp sugar
2 tbsp oil (e.g. rapeseed oil)
2 tbsp sesame oil (im Shop ansehen)
2 tsp sesame seeds (im Shop ansehen)
Method (15 minutes)

Step 1
Get the ingredients for the soba noodle salad with edamame and radishes ready.

Step 2
Then cook the soba noodles according to the instructions on the packet, drain through a sieve, soak in cold water for 3 minutes and then leave to drain until ready to use.

Step 3
In the meantime, wash the vegetables and pat them dry, then defrost the edamame and remove the pods. Cut the carrot and pepper into thin strips, the radishes into thin slices and the spring onion into diamond shapes.

Step 4
Now, in a large bowl, mix together the rice vinegar, soya sauce, salt, sugar, olive oil and sesame oil to make the dressing.

Step 5
Now gradually add the vegetables and the soba noodles to the bowl and fold everything in well.

Step 6
Finally, divide the salad between plates (or bowls) and sprinkle with sesame seeds. Done – Itadakimasu!
