Are you ready to step into the soothing world of Shogayu? Imagine how a steaming cup of this delicious Japanese ginger tea envelops your senses and warms you from the inside out. The perfect combination of fresh ginger, sweet honey and a splash of lemon makes Shogayu an unrivalled treat on cold days.


Ingredients (serves 2)

1 small knob of fresh ginger (approx. 3 cm long)
½ lemon (or 2 tbsp lemon juice)
2 tbsp honey
400 ml water
1 tbsp potato starch (im Shop ansehen)

Useful tools:
Japanese Yukihiara saucepan
Japanese grater (im Shop ansehen)


Preparation (5 minutes)

Step 1

Prepare the ingredients necessary for making homemade Shogayu tea.

First, we’ll take care of the ginger: to do this, remove the skin with a spoon or a small knife. Then grate the peeled ginger root and, if necessary, chop it finely and evenly with a knife.

Measure out the water . Place the grated ginger in a small saucepan and add a small splash of water to help the ginger separate.

Then add the honey and stir everything together well. Add the remaining water and bring the tea to the boil.

Meanwhile, cut the lemon in half if necessary and squeeze out the juice.

Once the tea has come to the boil, turn off the heat and add the lemon juice . Also, mix the starch with 1 tbsp water and add it to the tea drop by drop.
Stir well and pour the hot tea into cups (feel free to garnish with a slice of lemon) and serve.
Tip: This goes perfectly with delicious Matcha Dorayaki.
