Make your own Matcha muffins:

The beauty of this recipe is its simplicity. You don’t need any special kitchen equipment, and the ingredients are easy to source.

In a bowl, mix the flour, Matcha and baking powder. In a second bowl, whisk the sugar, vanilla sugar, egg, milk, yoghurt and oil until smooth. Then add the dry ingredients and stir everything together to form a smooth batter.

Finally, add the chocolate chunks, which give the muffins a sweet, chocolatey flavour.

  1. Preheat your oven to 180°C and line a muffin tin with paper cases.
  2. In a bowl, mix the flour, Matcha and baking powder.
  3. In a second bowl, whisk together the sugar, vanilla sugar, egg, milk, yoghurt and oil until smooth.
  4. Add the dry ingredients to the egg mixture and stir everything together to form a smooth batter.
  5. Add the chocolate chunks and divide the batter evenly between the muffin cases.
  6. Bake the muffins for about 20 minutes, until they have risen and are lightly golden brown.

Ingredients (12 pieces)

180 g flour (e.g. wheat)
1 tbsp Matcha (im Shop ansehen)
1 tsp baking powder
100 g </ strong>sugar
1 tbsp vanilla sugar
1 egg
120 ml milk
3 tbsp yoghurt (plain)
60 ml oil (e.g. rapeseed oil)
100 g chocolate chunks (white)

Preparation (30 minutes)

Step 1

Gather the ingredients for the delicious Matcha muffins and preheat the oven (top and bottom heat) to 180°C.

First, mix the egg, sugar and vanilla sugar together in a bowl using a hand mixer until you have a creamy mixture.

Then sift in the flour, Matcha and baking powder.

Then add the milk, yoghurt and the oil and mix everything thoroughly with a mixer until you have a smooth batter with no lumps.

Finally, add the white chocolate chunks to the mixture and stir them in well with a spoon so they are evenly distributed in the batter.

Now line a muffin tin with 12 paper muffin cases. Then, one by one, fill each muffin case two-thirds full with batter.

Bake the Matcha muffins for 20 minutes

Step 7

Place the muffins in the hot oven and bake on the middle shelf for 20 minutes.
Once the baking time is up, take the cupcakes out, leave them to cool and remove them from the cases. Either serve straight away (my favourite way 😉 ) or pack them up to take with you. Done – Itadakimasu!
