Dashi stock is the taste of Japan, and Shimaya’s variety is a must-have on every Japanese pantry shelf. Since its introduction in 1964, this delicacy has been cherished in Japan. Dashi forms the basis of umami (the fifth taste alongside sweet, sour, salty and bitter) and lends most traditional Japanese dishes a uniquely aromatic depth.
Typically, dashi stock is made from katsuobushi (also known as bonito flakes), kombu (dried seaweed) and water. However, many Japanese people – especially when they need to cook quickly – turn to Shimaya’s Dashi No Moto (a ready-made instant dashi stock).
Shimaya still manufactures its products today in its founding town of Shunan in Yamaguchi Prefecture. A particularly handy feature is that the dashi dissolves easily in water and has a natural flavour of dried bonito, as the dashi is not subjected to high heat during production!
