The beauty of mentsuyu is that you can easily make it at home. All you need are the ingredients listed above and a little patience, as they blend together in the pan to form a harmonious sauce. Once your mentsuyu is ready, you can store it in a screw-top jar and keep it fresh in the fridge for up to a month. This concentrated sauce is usually diluted to achieve the perfect flavour for your dish.

Tip
A typical ratio for dipping sauces is 1 part mentsuyu to 4 parts water. But don’t hesitate to experiment with the proportions until you find the flavour that suits you best.

Mentsuyu sauce

Ingredients (400 ml)
100 ml Sake (im Shop ansehen)*
100 ml Shoyu (im Shop ansehen)*
100 ml Mirin (im Shop ansehen)*
2 tsp sugar
1 sachet Dashi broth (instant) (im Shop ansehen) or 1 tbsp Dashi broth (im Shop ansehen)*
Method (10 minutes)

Step 1
Prepare the ingredients for the homemade mentsuyu sauce.

Step 2
Pour the Sake into a saucepan and bring to the boil over a medium heat so that the alcohol evaporates (simmer gently for about 2 minutes).

Step 3
Now add soya sauce, Mirin, sugar and the Dashi to the Sake and bring to the boil briefly. Once the sauce has come to the boil, reduce the heat to the lowest setting and simmer for 5 minutes. Stir regularly to dissolve the sugar.

Step 4
Then turn off the heat, set the saucepan aside and leave to cool.
The sauce can now either be used straight away (for example, for zaru soba –don’t forget to dilute it with water!) or be poured into a screw-top jar.

Step 5
Done – Itadakimasu!
