When it comes to traditional Japanese desserts, Mochi is certainly always the very best option, as Mochi are by far the most popular Japanese sweet!
Mochi are made up of a thin layer of glutinous rice flour dough on the outside, with a delicious, flavourful filling hidden inside, such as a sweet paste made from red adzuki beans or even whole strawberries.
Japanese glutinous rice cakes are made by steaming short-grain glutinous rice that has been ground into flour. There are many different methods for cooking Mochi dough. My favourite method is to cook the Mochi dough using a classic steamer insert in a saucepan.
And for that, of course, you’ll need a steamer insert! As you can see in my recipes, I always use this foldable steamer basket for stainless steel pots.
Tip: The handle in the middle can be unscrewed!
To cook the dough for the rice cakes in the saucepan, place the bowl containing the dough in the steamer. Wrap the saucepan lid in a tea towel to prevent condensation from dripping into the dough, and steam the mochi dough for 15 minutes. Halfway through, stir the batter once with a slightly damp spoon – and voilà!
Simply a perfect kitchen aid, not only for moch batter, but also for steaming vegetables.
