What is gochujang?
Gochujang is a traditional Korean seasoning paste made from fermented soya beans, rice, chilli (Gochugaru) and salt. It is one of the most important basic ingredients in Korean cuisine and is used in many classic dishes. The fermentation process creates an intense, complex flavour with an Umami note.
What does gochujang taste like?
The paste combines a pleasant heat with a slight sweetness and a deep, fermented savouriness. It is less spicy than pure chilli pastes, but more aromatic and well-rounded in flavour. This makes it well-suited for beginners and for versatile uses in the kitchen.
What can I use Gochujang for?
Gochujang is traditionally used in Bibimbap, Tteokbokki or Bulgogi. It is also suitable for marinades, sauces, soups or dips. It is also versatile when combined with mayonnaise or used as a base for dressings, instantly adding depth to a dish.
