What is Hon Mirin?
Hon Mirin is a traditional Japanese cooking wine made from rice, Koji and alcohol. Fermentation creates a natural sweetness and a complex flavour. In Japanese cuisine, Mirin is often used alongside soya sauce, Sake or sugar to give dishes a balanced blend of sweetness and Umami.
What does Mirin taste like?
Mirin has a mild, natural sweetness and a slightly syrupy consistency. Its flavour is smooth and rounded and pairs well with savoury ingredients such as soya sauce. This creates the characteristic balance found in many Japanese sauces and glazes.

What is the difference between Hon Mirin and ‘fake’ mirin?
Genuine Hon Mirin is produced by fermenting rice and contains alcohol. Many cheaper products, on the other hand, are so-called ‘Mirin seasonings’, which are made with sugar or syrup. Hon Mirin has a more complex flavour and is therefore preferred in Japanese cuisine.
How should I store Hon Mirin?
Mirin has a long shelf life and should be stored in a dry place, away from direct sunlight. Once opened, it is advisable to keep the bottle in the fridge. This helps preserve the flavour for longer.
