Delicious Yakimeshi: Perfectly fried rice in just a few passaggi!

Japanese-style fried rice is a quick and easy dish that’s not only great for using up leftovers, but can also be prepared in no time at all with a few simple ingredients such as ham, eggs and spring onions.

That actually sounds like a challenge that could well be of our time, doesn’t it? In the face of food waste, this recipe for fried rice is right on the money!

Yakimeshi remains a popular Japanese dish to this day, although the ingredients may vary depending on the region, season and personal preferences.

However, fried rice is the centrepiece of the dish. This is fried in a pan with spring onions, ham and egg. It is seasoned with Sake, soy sauce, garlic and a little pepper.

Tip

Don’t stir the fried rice and ingredients too vigorously, so that the rice doesn’t become mushy. Instead, toss the pan so that the rice becomes slightly crispy!

It is so popular in Japan that it is even offered as a standard dish in many restaurants and food stalls. Variations include a wide range of ingredients, from peas, onions, mushrooms, meat and prawns right through to Kimchi!

In a nutshell: First, the rice is cooked and left to cool to achieve the perfect consistency. Then the ingredients are prepared and fried in the pan with the rice until everything is well cooked and golden brown. Finally, the dish is seasoned with Sake and soy sauce and garnished with spring onions.

Immerse yourself in the world of Japanese cuisine and prepare perfectly fried rice with my simple yakimeshi recipe. Yakimeshi is a traditional Japanese rice dish made with various common ingredients such as vegetables, ham and egg. In just a few passages, you can conjure up a delicious and authentic meal from Japan in your own kitchen. Give it a go now!


Ingredients (serves 2)

2 portions rice (to the recipe) (preferably from the day before) *
2 slices ham (e.g. cooked ham)
2 eggs
1 clove of garlic
1 spring onions
1 tbsp sesame oil (im Shop ansehen)*
2 tbsp Shoyu (im Shop ansehen)*
2 tbsp Sake (im Shop ansehen)*


Preparation (10 minutes)

Step 1

Prepare the ingredients for yakimeshi.
Tip: This recipe works best with rice cooked the day before or leftover rice. Spread it out flat on a plate, then chill it. The next day, take it out an hour beforehand and let it warm to room temperature.

Cut the ham into small cubes. Wash the spring onion under running water, drain and cut into thin rings (ideally using a large knife; split it down the middle, fold it over and cut from the top down into fine rings, removing the root end). Set the white and green parts aside separately.

Then season the eggs in a bowl with pepper and beat them.

Now heat the sesame oil in a pan over medium heat. First, fry the white parts of the spring onion and the diced ham for 2 minutes.

Then add the garlic using a garlic press. Turn the heat up high.
Next, add the egg mixture and the rice . Mix both together immediately and, if possible, break up any clumps of rice using a spatula.
Fry everything vigorously – don’t stir it around wildly, but rather tilt the pan so that the rice becomes slightly crispy.

Turn off the heat and season with Sake and soy sauce . Toss once more and distribute evenly.

The yakimeshi is now ready. To serve, it is best to rinse a small bowl with water, then pour in the fried rice without drying it. Place a plate on top like a lid, turn everything over and lift off the small bowl.
Garnish with the green spring onions. This goes well with a hearty vegetable soup and pickled vegetables.
