Fruity & delicious: make your own simple and flavourful teppanyaki sauce!

In just a few simple steps and in less than 15 minutes, you can conjure up a heavenly-smelling teppanyaki sauce! The tempting combination of onion, apple, garlic and ginger is just waiting to give your teppan (Japanese grill) that special something. It simply tastes best when homemade!

This teppanyaki sauce is based on a recipe by Harumi Kurihara. In her book Easy Japanese Cooking, she shares her wonderful ‘Harumi’s Grilling Sauce’, which I fell in love with straight away. The fresh ingredients give it a wonderful aroma and a delicious flavour.

Make your own teppanyaki sauce:

I’ve adapted the original recipe by using less soy sauce and (instead of grinding the sesame seeds) briefly purée the barbecue sauce at the end. A dash of chilli oil gives my barbecue sauce that final kick!

The barbecue sauce is also great as a dip or side sauce for other dishes! It keeps in the fridge for at least a week in airtight jars.

Teppanyaki Sauce Preparation

So, here are the ingredients you’ll need for your homemade Teppanyaki sauce:

Tip

A non-alcoholic alternative to red wine is a combination of grape juice and a mild vinegar.

To prepare, roughly chop the apple, onion, garlic and ginger and set aside. Bring the red wine to a gentle simmer in a saucepan and stir in the soy sauce, honey, sugar and Miso. Add the chopped ingredients, sesame seeds and chilli oil and heat gently until the apples have softened. Then purée the mixture into a creamy sauce. Pour into jars or serve directly with the teppanyaki.

Teppanyaki sauce

Ingredients (6 servings = 400 ml)

100 ml red wine (dry)
100 ml Shoyu (im Shop ansehen)*
2 tbsp honey
75 g sugar
1 tbsp Miso paste (im Shop ansehen)*
50 g apple
50 g onions
2 garlic cloves
25 g ginger (fresh)
3 tbsp chilli oil (sesame oil with chilli) (im Shop ansehen)*
3 tbsp sesame seeds (im Shop ansehen)*


Preparation (15 minutes)

Step 1

Prepare the ingredients for the homemade Teppanyaki barbecue sauce.

To begin with, peel the apple, onion, garlic and ginger and roughly chop each into small pieces (as the sauce will be puréed at the end, the ingredients only need to be roughly chopped). For the garlic, first press it lightly with the back of a knife, then remove the skin and slice it thinly. Set everything aside until needed.

Step 3

In a small saucepan, bring the red wine to the boil over a medium heat. As soon as the wine boils, reduce the heat to the lowest setting and add the soya sauce, honey, sugar and Miso paste.

Mix everything well stir, then heat the sauce slowly again until it almost comes to the boil.

Then add the finely chopped ingredients (apple, onion, garlic and ginger) to the pot.

Add the sesame seeds and chilli oil as well, stir everything in thoroughly and heat gently until the sauce is just about to boil (the apples should have softened slightly). Now turn off the heat and remove the pan from the hob.

Purée the contents of the pan directly in the pan or in a suitable container to form a creamy sauce.

Pour the finished Teppanyaki barbecue sauce into previously rinsed jars and seal tightly (it will keep for at least 1 week in the fridge) or serve with the Teppanyaki as a dipping sauce.
