Today I’m taking you on a sweet journey into the world of Matcha! Together we’ll be making a heavenly Matcha pudding, topped with a light and airy Matcha cream. It’s a simple yet delicious recipe that will enchant your palate with the unmistakable flavour of Matcha.

What is Matcha?

Matcha is a finely ground, bright green tea powder that plays a central role in the traditional Japanese tea ceremony. Its origins date back hundreds of years and its popularity has spread worldwide.

Make your own Matcha pudding:

Matcha pudding is a wonderful dessert for any season. In summer, it offers a refreshing, cool treat, whilst in winter it captivates with its vibrant colour and rich flavour.

The beauty of this recipe is its simplicity. You don’t need any special kitchen equipment, and the ingredients are easy to source.

Make your own Matcha pudding

For our Matcha pudding, we need:

Soak the gelatine leaves in cold water. In a saucepan, heat the milk, sugar and Matcha powder over a medium heat until the sugar and Matcha powder have completely dissolved. Squeeze out the gelatine leaves and dissolve them in the warm matcha milk. Pour the mixture into pudding moulds and leave to set in the fridge for about 2 hours.

Prepare the Matcha cream for the pudding

Shortly before the end of the chilling time, we prepare the Matcha cream: For this, we will also need:

  • Cream
  • Icing sugar
  • Vanilla sugar
  • Matcha powder

In a bowl, whip the cream with icing sugar, vanilla sugar and Matcha powder until stiff. The cream should be light and fluffy and an even green colour. Serve the set pudding with the fluffy Matcha cream. And that’s it…!

Matcha pudding

Today I’m taking you on a sweet journey into the world of Matcha! Together we’ll make a heavenly Matcha pudding, topped with a light and airy Matcha cream. It’s a simple recipe that will enchant your palate with the distinctive flavour of Matcha.


Ingredients (12 portions)

300 ml milk
50 g sugar
10 g Matcha (im Shop ansehen)
2 gelatine leaves
50 g Anko, sweet red bean paste (to the recipe)

For the Matcha cream:
200 ml cream
40 g icing sugar
1 tbsp vanilla sugar
1 tsp (level) Matcha

Useful tools:
Japanese Yukihiara saucepan
Fine-mesh sieve (im Shop ansehen)
Piping bag


Preparation (10 minutes + 2 hours chilling)

Step 1

Prepare the ingredients for the homemade matcha pudding.
Please note: The anko should already be prepared and completely cooled by now (you can find my recipe here).
Please also note that once prepared, the pudding must be chilled for 2 hours before serving!

First, we soak the gelatine (if you wish to use a different type, follow the instructions on the packet): To do this, fill a bowl with cold water, place the gelatine leaves in it and leave to soak for 5 minutes.

Meanwhile, measure out the milk and pour almost all of it into a saucepan – please leave about 5 tbsp of milk in the measuring jug.

Now sift the matcha powder into the measuring jug containing the remaining milk and add the sugar . Whisk everything together until well combined.

Bring the milk in the saucepan to the boil, stirring continuously. As soon as the milk has come to the boil, add the milk and Matcha mixture. Also add the soaked gelatine leaves directly from the water into the saucepan. Whisk quickly with a whisk. Bring to the boil again briefly and then remove from the heat.

Now divide the anko between two dessert bowls and stir in a tablespoon of the Matcha pudding into each. Then divide the pudding between both bowls. Place the Matcha pudding in the fridge for 2 hours to set.

Shortly before the end of the chilling time, we prepare the crema con Matcha: To do this, place the cream and the vanilla sugar in a bowl, then sift in the icing sugar and Matcha . Whisk everything together with a hand mixer until stiff.

Then fill a piping bag (you can also spoon the cream onto the pudding if you don’t have a piping bag).

Remove the chilled, set pudding from the fridge and decorate with the Matcha cream.
Finally, garnish with a little fine matcha powder and serve with a cup of Japanese ginger tea. Done – Itadakimasu!
