Stuffed Sushi is most commonly prepared at home to make rice portable as a snack for on the go. There are all sorts of fillings, with the rice often mixed with various herbs or seasonal vegetables.

The basis for this recipe is homemade Sushi rice, for which it’s best to use short-grain (or round-grain) white sticky rice (im Shop ansehen) is used. This contains a high amount of starch and therefore absorbs liquid well, which in turn means that it sticks together nicely after cooking – a must for delicious inari Sushi!

Traditional inari sushi consists of delicious deep-fried tofu pouches filled with homemade Sushi rice. Incidentally, these tofu pouches are made from ordinary Tofu!

To make them, the first step is to turn the Tofu into aburaage by cutting it into thin slices and then deep-frying it first at 110–120°C and then a second time at 180–200°C.

The light-coloured, crispy fried slices of tofu are then halved and simmered in a stock made from Dashi, sugar, soya sauce, Mirin and Sake simmered gently for 20 minutes. This gives them a wonderfully sweet and savoury flavour, which goes perfectly with the slightly tangy Sushi rice!

Inari Sushi

Inari sushi is a must-have on any Japanese Sushi menu! The homemade Sushi rice filling is wrapped in deep-fried tofu pouches, which give it a distinctive flavour that’s both sweet and savoury. By the way, this recipe isn’t just delicious at home – it’s also a real treat for an outdoor picnic!


Ingredients (serves 4)

600 g Sushi rice (see recipe):
300 g rice (im Shop ansehen)
1 piece Kombu (im Shop ansehen)
2 tbsp Sushi no ko (im Shop ansehen)

2 tbsp sesame seeds (toasted) (im Shop ansehen)
12 Inari Sushi no moto (deep-fried tofu pouches)


Method (10 minutes + 60 minutes to cook the rice, if required)

Step 1

Gather the ingredients for the homemade Inari Sushi and prepare the sushi rice (click here for the recipe for delicious sushi rice) and leave to cool briefly. Also (if using ready-to-cook Inari Sushi no moto), remove the deep-fried tofu pouches from the packaging and leave them to drain.


Inari Sushi Step 2: Mix the rice with sesame seeds

Mix the Sushi rice with the sesame seeds in a bowl. Take care not to crush the rice; mix everything together gently.

Now carefully unfold each tofu pouch along the cut edge to form a proper pouch. The pouches tear easily, so a bit of finesse is required here.


Inari Sushi Step 4: Filling the tofu pouches with rice

Then fill a tofu pocket with about 2 tbsp of the prepared sesame Sushi rice and press it down slightly into the corners. The pocket should be about half full.
Next, fold one side of the cut edge inwards and fold the second side over it. Place on a plate with the fold facing downwards. Fill all the tofu pouches in this way.


Inari Sushi Step 5: Done

Serve the Inari Sushi or pack it in an airtight container to take with you. Eat the stuffed tofu pouches within a day. Done – Itadakimasu!
