Menma – flavourfully marinated bamboo shoots for Ramen

Menma is one of my favourite toppings for Ramen! These seasoned bamboo shoots are a classic Japanese accompaniment to all kinds of noodle soups, but they can also be served as a snack with rice. The delicate, marinated slices of menma become slightly crispy and very flavourful. With just 4 ingredients and in less than 10 minutes, you can easily make this ramen treat yourself!

A major part of Ramen’s huge popularity is down to the appealing presentation of these delicious noodle soups. As you’ll also learn in my main post on Ramen, choosing the right selection of toppings and accompaniments for ramen noodle soup is a crucial factor. For many Japanese Ramen Shops, the toppings are the defining feature!

The accompaniments can range from simple vegetables and spices to far more complex meats and sauces, which need to be prepared separately and in advance.

The toppings are always perfectly arranged and bring a splash of colour to the table. Many people are familiar with marinated Ramen eggs, braised chashu pork belly and, of course, spring onions cut into rings.

Today I’ll show you how to make menma – marinated bamboo shoots – yourself!

Menma is traditionally made from dried and then fermented bamboo shoots. Today, however, I’m going to show you a quick and easy recipe for this tasty side dish.

All we need are just 4 ingredients: bamboo shoots, tsuyu, sugar and a little sesame chilli oil!

It’s ready in a flash. In less than 10 minutes, you can serve menma bamboo shoots with your noodle soup!

Bring the bamboo slices to the boil in a small saucepan with tsuyu and sugar. After 5 minutes, the liquid will have almost completely evaporated. Add a dash of sesame chilli oil and you’re done!

By the way, there are a few other ways to enjoy this simple, tasty Japanese side dish, including:

  1. As a ramen topping: Menma is most commonly served with noodle soups , where it adds a mild sweetness to the noodles and broth.
  2. As a stir-fry: Stir-fried menma goes just as well with crispy fried rice; served with thinly sliced spring onions and a little sesame (im Shop ansehen), it’s a real treat.
  3. With rice: You can also enjoy menma together with a selection of Tsukemono varieties, i.e. pickled vegetables, as a simple side dish to freshly steamed rice.

Ingredients (serves up to 8)

1 tin of sliced bamboo shoots (approx. 140 g) (im Shop ansehen)*
50 ml Tsuyu stock (im Shop ansehen) (alternatively: 2 tbsp soya sauce + 2 tbsp Mirin + 2 tbsp Dashi broth)*
1 tbsp sugar
1/2 tsp La-Yu sesame chilli oil (im Shop ansehen)*

Preparation (10 minutes)

Step 1

Prepare the ingredients for the marinated menma bamboo slices.

Drain the bamboo slices through a sieve and rinse briefly under cold water. Then place all the slices in a small saucepan. Also add tsuyu and sugar , and bring everything to the boil.

Bring the contents of the pan to the boil briefly, reduce the heat and let the bamboo slices simmer gently for 5 minutes. By then, the liquid will have almost completely evaporated. Turn off the heat and add the sesame chilli oil.

Mix everything together once more and then serve straight away. The marinated bamboo slices are enough for up to 8 portions. However, they can also be stored in the fridge for a few days and eaten in portions. Tip: Menma tastes best with homemade Ramen noodle soups! Ready – Itadakimasu!
