Goma Wakame – Japanese seaweed salad with yuzu & sesame

Goma Wakame is a typical Japanese seaweed salad that is not only delicious but also a light treat to accompany an authentic Japanese-style meal. This recipe is particularly quick and easy to prepare – the highlight is the yuzu juice used, which gives the salad a subtle, exotic flavour!

Wakame seaweed is an incredibly versatile ingredient in Japanese cuisine. Wakame is often referred to as ‘sweet vegetable seaweed’, as the leaves are crisp and the flavour is comparatively sweet.

Wakame seaweed originally comes from the Pacific Ocean around Japan, China and Korea – though today it is cultivated in shallow waters in many places. After two years of growth, the leaves are harvested and usually dried so they’re ready for cooking.

In Japan, rehydrated Wakame is particularly popular as an ingredient in soups (for example, in Misoshiru) or as a salad accompaniment.

Ingredients (2 portions)

4 tbsp Wakame (im Shop ansehen)*
1 tbsp yuzu juice (or lime juice)
1/2 tbsp rice vinegar (im Shop ansehen)*
1 tbsp sesame oil (im Shop ansehen)*
1/2 tbsp sugar
1 tbsp sesame seeds (toasted) (im Shop ansehen)*
a little pepper (freshly ground)


Method (15 minutes)

Step 1

Gather the ingredients for the homemade Goma Wakame salad.


Goma Wakame Salad Step 2: Soak the seaweed

Step 2

To begin with, place the Wakame in a medium-sized bowl and cover it completely with lukewarm water until it reaches just below the rim of the bowl – the Wakame will absorb the water, so the bowl should not be too small. Leave to soak for 10 minutes.

Meanwhile, in the bowl in which the salad is to be served, mix together the ingredients for the dressing yuzu juice, rice vinegar, sesame oil, sugar, sesame seeds and pepper .

Once the wakame has absorbed the water, strain it through a sieve and leave it to drain briefly. Then add it to the dressing and fold in.
