“Goma” means sesame seeds and “Dare” simply means sauce. But this sauce is anything but simple. It’s a flavour explosion created from just a few ingredients.

The main ingredient, the Japanese sesame paste nerigoma, is the secret behind this creamy and intense sauce. Combined with sweet sugar, salty soy sauce, mild rice vinegar and savoury brodo Dashi, it creates a symphony of flavours that will make your mouth water and that of your guests.

So, here are the ingredients you’ll need for your homemade sesame sauce:

Make your own sesame sauce

Start by stirring the tahini well and placing it in a bowl with the sugar. Add the soy sauce, rice vinegar and brodo Dashi, and stir everything together until smooth. Dilute with brodo Dashi if necessary, and season to taste with salt at the end.

A few more tips on the side

  • Give it a good stir! The sesame paste tends to separate from the oil. So, give it a good stir until it’s nice and creamy before you use it.
  • Less is sometimes more: If you’ve made your own sesame paste, a small amount is often enough to give it a full flavour.
  • Just carry on: If your sauce ever gets too thick, simply thin it with Dashi or water and carry on.

Ingredients (for 2 servings = 150 ml)

4 tbsp sesame paste (e.g. tahini) (im Shop ansehen)*
2 tbsp sugar
1 tbsp soy sauce (im Shop ansehen)*
2 tbsp rice vinegar (im Shop ansehen)*
3 tbsp brodo Dashi (im Shop ansehen)* (to the recipe)
a little salt


Preparation (5 minutes)

Step 1

Prepare the ingredients for the homemade sesame sauce.
Tip: If you want to serve this sesame sauce with Shabu Shabu, this homemade ponzu sauce goes very well with it!

To begin with, start by stirring the tahini well. Then measure it out and place it in a bowl. So, add sugar and mix well.


Sesame sauce: step 3 – season with soy sauce, rice vinegar and dashi

Then add soy sauce, rice vinegar and the brodo Dashi and stir thoroughly.
Tip: To prevent the sauce from becoming lumpy, it is best to add the ingredients to the mixture a little at a time and stir them in.
Once everything has been stirred in, the consistency of the sauce should be smooth yet slightly runny. If the sauce seems too thick, simply thin it with a little more Dashi. Season the sauce with a little salt .


Sesame Sauce Ready

Step 4

Try the homemade sesame sauce as a dip for Shabu Shabu! With its rich, nutty flavour, it also goes well with steamed vegetables, salad, cold Tofu or Udon noodles. It will keep in the fridge in an airtight container for up to 5 days. Done – Itadakimasu!
