A savoury and versatile Teriyaki sauce is now one of the most important condiments both outside and within Japan. Many of you are surely wondering whether and how you can actually make your own homemade Teriyaki sauce?! And the answer is YES 😊!
And the best thing about homemade Teriyaki sauce? It takes just 4 simple ingredients and you can whip up a delicious sauce that goes with everything! It’s so easy to make that you’ll definitely want to keep it on hand from now on.

The wonderful thing about Teriyaki sauce is its versatility. Here are some of my favourite ways to use this sauce: as a marinade for meat or seafood, as a glaze for barbecued dishes, or as a sauce for stir-fries.
First of all, in case you didn’t know, ‘Teriyaki’ actually describes a cooking method in Japanese. ‘Teri’ means gloss and ‘yaki’ means grilled, roasted or fried. So, for the Japanese, the word doesn’t describe the sauce, but how the food is prepared.

Teriyaki therefore essentially refers to grilled/roasted/pan-fried dishes with a glossy marinade. When a dish is prepared in the Teriyaki style, it is marinated in soy sauce, Sake and Mirin, plus a little sugar.

Making your own Teriyaki sauce:
To make the Teriyaki sauce, we only need these 4 basic ingredients from the Japanese pantry:
- Shoyu – Please use only Japanese soy sauce (im Shop ansehen), as it has a different flavour profile to Chinese, Thai or Korean soy sauce. You can also use Tamari.
- Sake – Japanese rice wine (im Shop ansehen) adds a hint of fruitiness and complexity to the sauce.
- Mirin – This is Japanese sweet rice wine (im Shop ansehen). It adds a delicate sweetness and aroma and gives the sauce a lovely sheen.
- Sugar – Sugar adds sweetness and balances the salty, savoury flavour of the Teriyaki sauce. It is also crucial for giving the sauce its slightly thick texture.

Tip
Ratio for 200 ml of homemade Teriyaki sauce = 8 tbsp soy sauce + 4 tbsp Sake + 4 tbsp Mirin + 4 tbsp sugar
After 3 simple cooking steps, the delicious Teriyaki sauce is ready. In a medium-sized saucepan, mix the Sake and Mirin, then add the soy sauce and sugar. Bring the mixture to the boil over a medium heat, stirring constantly until the sugar has dissolved.

Once it has come to the boil, reduce the heat and let the sauce simmer for 15 minutes or until it has thickened. Then remove it from the heat and leave to cool. The sauce will continue to thicken as it cools.
Cooking with Teriyaki sauce:
By the way: there are many recipes that recommend ingredients such as rice vinegar or apple cider vinegar, brown sugar, sesame oil or fresh garlic in the Teriyaki sauce. Some also use ground ginger or garlic powder. I wouldn’t recommend this if you want to make an authentic Japanese Teriyaki sauce.
Adding these ingredients creates a slightly different flavour and may overpower a dish. Japanese cuisine is all about subtle flavours.
Of course, you can still adapt the recipe to suit your own tastes. Depending on the type of meat, fish or vegetables, grated ginger, garlic or a little butter goes really well with it 😊.

Tip
You can use the homemade Teriyaki sauce straight away as required, or store it in an airtight, sterilised jar, such as a preserving jar, in the fridge for up to 2–3 weeks.

4 tbsp Sake (im Shop ansehen)*

Preparation (20 minutes)

Step 1
Gather the ingredients for the homemade teriyaki sauce.

Step 2
In a saucepan, stir together the Sake, Mirin, soy sauce and sugar and bring to the boil over a medium heat.

Step 3
Once the sauce has come to the boil, reduce the heat to the lowest setting and simmer for 15 minutes. Stir regularly to dissolve the sugar.

Step 4
Once cooked, either use the sauce immediately or pour it into a screw-top jar and leave it to cool with the lid open (this will make the consistency slightly thicker).

Step 5
Finally, screw the lid of the jar and store in the refrigerator for up to 3 weeks. Done – Itadakimasu!
