You only need 4 ingredients for this recipe: soya sauce,

Mirin, Sake and sugar!

Soy sauce (also known as Shoyu) is one of the cornerstones and basic ingredients of Japanese cuisine and the world’s most widely consumed product made from soya beans!

Soya sauce is traditionally produced through fermentation using soya beans, wheat and salt. Thanks to its rich Umami flavour, it is ideal for seasoning and enhancing a wide variety of Japanese dishes – such as noodle soups, broths, marinades and, of course, Sushi – making it a true all-rounder.

Sake (also known as Nihonshu) is an alcoholic drink and Japanese cooking ingredient made from rice and water. Although sake is referred to as ‘rice wine’, it is not produced by fermentation but by brewing (as with beer). In the production of sake, rice starch is converted into sugar, which is then converted into alcohol by yeast.

Teriyaki salmon

Everyone really loves this classic Japanese dish: salmon in Teriyaki sauce! With this delicious recipe, you can prepare tender, crispy salmon fillets in a homemade sweet-savoury Teriyaki sauce – a real eye-catcher!


Ingredients (2 portions)

350 g salmon fillet (with skin)
1/4 tsp pepper
1/4 tsp salt
4 tbsp flour (preferably plain flour)
3 tbsp oil (e.g. rapeseed oil)
1 tbsp butter
1 tbsp Sake (im Shop ansehen)

For the Teriyaki sauce:
2 tbsp sake
2 tbsp mirin (im Shop ansehen)
4 tbsp soy sauce (im Shop ansehen)
2 tbsp sugar

(optional) Sesam (im Shop ansehen)


Preparation (20 minutes)

Step 1

Get the ingredients ready for the teriyaki salmon.

First, for the Teriyaki sauce, stir together soy sauce, mirin, sake and sugar in a bowl and set aside.

Rinse the salmon fillet under running water and pat it thoroughly dry with kitchen paper. Then (if the fish is not pre-cut) cut it into fillets of roughly equal size and season with salt and pepper on all sides, rubbing it in lightly.

Sprinkle the flour evenly over the fish fillets and rub it in gently on all sides so that the salmon develops a crispy crust when fried!


Teriyaki Salmon Step 5: Melt the butter

Heat a large frying pan over a medium heat and add oil and butter, allowing them to melt.

Place the salmon fillets skin-side down in the pan and fry for about 3 minutes until crispy. Then turn them over carefully.

Now pour a little Sake over the salmon and leave the fish to steam for 2 minutes with the lid on. Remove the cooked salmon fillets from the pan and set them aside on a plate.


Teriyaki salmon: Step 8 – marinating

Turn the heat under the pan down to low. Then pour the prepared Teriyaki sauce into the pan and bring to the boil. Place the previously fried salmon fillets into the hot Teriyaki sauce.
Using a spoon, keep spooning the slightly thickened sauce over the fish. Leave to marinate in this way for about 3 minutes.

Arrange the cooked teriyaki salmon fillets on a plate, pour the remaining teriyaki sauce from the pan over them and, if desired, garnish with a few sesame seeds. Done – Itadakimasu!
