The secret behind this recipe lies in the homemade Japanese Teriyaki sauce! This savoury, sweet and aromatic sauce goes perfectly with stir-fried vegetables, meat and fish. You only need 4 ingredients for this recipe: soya sauce, Mirin, Sake and sugar!

Soy sauce (also known as Shoyu) is one of the cornerstones and basic ingredients of Japanese cuisine and the world’s most widely consumed product made from soya beans! Soya sauce is traditionally produced through fermentation using soya beans, wheat and salt. Thanks to its rich Umami flavour, it is ideal for seasoning and enhancing a wide variety of Japanese dishes – such as noodle soups, broths, marinades and, of course, Sushi – making it a true all-rounder.

Sake (also known as Nihonshu) is an alcoholic drink and Japanese cooking ingredient made from rice and water. Although sake is referred to as ‘rice wine’, it is not produced by fermentation but by brewing (as with beer). In the production of sake, rice starch is converted into sugar, which is then converted into alcohol by yeast.

Everyone really loves this classic Japanese dish: salmon in Teriyaki sauce! With this delicious recipe, you can prepare tender, crispy salmon fillets in a homemade sweet-savoury Teriyaki sauce – a real eye-catcher!


Ingredients (2 portions)

350 g salmon fillet (with skin)
1/4 tsp pepper
1/4 tsp salt
4 tbsp flour (preferably plain flour)
3 tbsp oil (e.g. rapeseed oil)
1 tbsp butter
1 tbsp Sake (im Shop ansehen)

2 EL Sake
2 EL Mirin (im Shop ansehen)
4 EL Sojasauce (im Shop ansehen)
2 EL Zucker

(optional) Sesam (im Shop ansehen)


Zubereitung (20 Minuten)

Als erstes für die Teriyaki Sauce Sojasauce, Mirin, Sake und Zucker in einer Schüssel verrühren und bereitstellen.

Das Lachsfilet unter fließendem Wasser abwaschen und mit einem Küchenpapier gründlich abtupfen. Anschließend (wenn der Fisch nicht vorgeschnitten ist) in möglichst gleich große Filets zerteilen und mit Salz und Pfeffer von allen Seiten würzen und leicht einreiben.

Sprinkle the flour evenly over the fish fillets and rub it in gently on all sides so that the salmon develops a crispy crust when fried!

Heat a large frying pan over a medium heat and add oil and butter, allowing them to melt.

Place the salmon fillets skin-side down in the pan and fry for about 3 minutes until crispy. Then turn them over carefully.

Now pour a little Sake over the salmon and leave the fish to steam for 2 minutes with the lid on. Remove the cooked salmon fillets from the pan and set them aside on a plate.

Turn the heat under the pan down to low. Then pour the prepared Teriyaki sauce into the pan and bring to the boil. Place the previously fried salmon fillets into the hot Teriyaki sauce.
Using a spoon, keep spooning the slightly thickened sauce over the fish. Leave to marinate in this way for about 3 minutes.

Arrange the cooked teriyaki salmon fillets on a plate, pour the remaining teriyaki sauce from the pan over them and, if desired, garnish with a few sesame seeds. Done – Itadakimasu!
